Here's my list:
-The Writer's Digest Hand Book of Novel Writing (used this for their Novel Writing Course both this book and the Course were great)
-On Writing Horror 2nd Edition put out by The Horror Writers Association (I have the first edition as well, both are good)
-How to Write Horror Fiction by William F. Nolan
-How to Write Tales of Horror, Fantasy & Science Fiction by J.N. Williamson
-The Elements of Fiction Writing- Plot by Ansen Dibell

Basically, it's stern and madden, as I noted earlier. As time goes on, my taste in "writing" books gets really, really snootier. It's like, "HEY YOU CAN BE PUBLISHED TOO!" and it's more inspiration and less nuts and bolts. Very very skimpy on the market information, and for those of us who've been through a number of fiction workshops, it's really the same information one learns there, just repackaged. The greates WTF??? moments is when I was in Borders the other day, and saw one of these guides HOW TO BE REWARDED AS PUBLISHED WRITER... the irony? It was a print on demand book.

Here are a couple other books to add to you list. They don't deal with horror or dark fiction, but fiction writing in general.

Some of these aren't focused on horror writing but I like:

The Forest Through the Trees by Betsy Lerner. Written by a editor, it has some nice information on the publishing world and is also a good well written book to read which a lot of rather grating info books aren't. Maybe more anecdotal then checklist, but for me that's part of its appeal.

I agree with howephunny on Zen in the Art of Writing by Ray Bradbury which sometimes gets a little redundant, but the main point that writing should be a great joy and wonderful fun is a point very well taken and not really covered as much elsewhere.

Like DeadScrypt, I also like On Writing by Stephen King, but more as a memoir and an inspirational book. I found the writer's advice sparse. I did enjoy how he included the first draft of one of his stories and the last draft!

The Fire in Fiction was pretty helpful, along with Writing the Breakout Novel, both by Donald Maass. I did like the Mort Castle book, but I've never read the one by Williamson.
